7 Days of Vegan eating

That’s right…we are doing it again!

 

All the summer cookouts and drinking-wine-on-patios are starting to catch up with me and I need a fresh start…so we are starting another vegan week challenge! I’ve prepared the menu below and I can’t wait to get started. Our last Vegan challenge was fun as we explored a new way of enjoying food AND I felt amazing after completely eliminating my beloved animal products (aka cheese) from my diet. So, I am excited again about the challenge and these new vegan recipes!

Breakfasts alternating between:

Steel cut oats and blueberries

Toast with peanut butter and fruit

Lunches alternating between:

Grilled Veggie and Hummus Wraps

Veggie Wrap with Garam Masala

Curried Tofu Salad Sandwhich 

Dinners

Monday: Pasta Primavera

Tuesday: Vegan Burritos 

Wednesday: Beer Battered Tofu Tacos

Thursday: Black Bean Burgers with Rustic Zuchini Tian 

Friday: Loaded Sweet Potato

Saturday: Vegan Pizza

Sunday: Cauliflower and Onion tart with Bean and Tomato Stew
