On any given day when asked what he wants to eat, my husband will say “pizza, burritos or buffalo wings”. Since all of those foods are major WW offences we avoid them unless we are really treating ourselves. But when I stumbled across this idea (from Half Baked Harvest) for Buffalo Quinoa Bites, which are made mostly out of quinoa and beans, I was intrigued! Had I perhaps found something that would help fight my husband’s buffalo wing cravings?!?
While they aren’t buffalo wings, they are buffalo-y and savory and a hit in this house! Here is how I made them:
- 15 oz can of cannellini beans
- 2 cups cooked quinoa
- 2 TBS melted butter
- 1 egg, beaten
- 1/2 cup bread crumbs
- 3 TBS hot sauce (I used Franks Hot Sauce)
- several splashes of olive oil
Combine the cannellini beans and quinoa in a large bowl and mash with a masher (or if you are feeling particularly animalistic like I did, you can use your bare hands) to mash the quinoa into the beans. Then add the egg, melted butter, hot sauce and bread crumbs and continue mashing with a masher, or bare hands. Lastly, make golf-size balls with the mixture and set aside. In a large frying pan, heat up the olive oil and then place the quinoa balls into the hot oil. Cover partially with a lid and cook on medium-high for several minutes before rotating the balls. Continue rotating every few minutes until the balls have been evenly fried (this will take approximately 10 minutes).
Serve with a salad topped with buffalo sauce or ranch! We like tomato, carrot, bell pepper and banana peppers on ours.
