
Ah, I love grilling season! Our go-to grilliables used to always be meat. But my, how we have evolved thanks to our Meatless Movement and our WW theory! These Grilled Veggie and Hummus Wraps are quickly becoming a new favorite as they are easy to make and delightfully healthful! And aren’t they beautiful? If you make them a few times and start to tire of them, you can easily use different veggies and a differently flavored hummus for an entirely new experience!
You’ll need:
- bell pepper, sliced (the color is up to you, I used red)
- onion, sliced
- 2 portabella mushrooms, cleaned and sliced
- zucchini, sliced
- about 2 handfuls of snow peas
- few slashes of olive oil
- small splash of balsamic vinegar
- 15 oz hummus (any flavor, we used Roasted Red Pepper which was awesome!)
- whole wheat tortillas
To make:
In a bowl, combine the sliced vegetables, olive oil and vinegar and stir until the vegetables are evenly coated.
Heat up your grill (we have a gas grill so it takes seconds for me). Lay a sheet of tin-foil over the grates and then grill vegetables for about 15 minutes, or to your liking.
Finally, assemble your wraps by coating your tortilla with your preferred amount of hummus and then pile on those delicious vegetables!
