In more efforts to promote our Meatless Movement, I found a great meatless sandwich concept to satisfy my BBQ craving! This is a great WW meal too as I used about $0.75 worth of lentils opposed to the $5.00 or more I would have spent on ground beef! You can’t beat savings like that!!!
Per usual, I took this idea and made a few changes, OK I made a lot of changes, but I owe The Local Vegan credit for the concept! The biggest change I made was using lentils instead of pinto beans for the sandwich as I prefer lentils in texture for a meat-replacement. We also had brat buns in our freezer so we used those instead of a burger bun. I was really surprised with how much I loved this!
For the sandwich
- 3 cups cooked lentils (about 1 cup uncooked)
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 cup BBQ sauce (your choice)
- 4 buns (burger or brat shape, lightly toasted)
For the coleslaw
- 1/2 cabbage, finely shredded (or 1 bag of pre-shredded cabbage)
- 4 large carrots, finely shredded
- 1/2 cup home-style salad dressing (this is what I used below) OR use this recipe for a coleslaw dressing recipe
Cook lentils per instructions on the bag (I boiled mine for about 45 minutes until all 4 cups of water were absorbed). Stir in the spices and then use a masher or fork to mash the lentils. Finally, stir in your BBQ sauce.
Then shred your cabbage and carrots (you can do this with a cheese grater or a knife if you dare). Once they resemble coleslaw, stir in either your store-bought or homemade dressing. Toast your buns slightly in the oven or on the grill and assemble your sandwich with the BBQ lentils topped with the coleslaw.
Serve with mashed cauliflower for a filling vegetarian meal!
