Southwest Quinoa Salad

 

Sometimes I am scraping together side dishes so I make sure my husband has enough to eat and I don’t have to hear about how I am starving him the rest of the night. I find this one is easy because I almost always have all these ingredients on hand. You just need a few veggies on hand, some quinoa and black beans (both staples in our house) to throw together this easy side dish. I serve this with anything from Veggie Enchiladas to Tuna Burgers. And the only skills you need are chopping and opening a can and boiling water.

You’ll need:

  • 2 cups cooked quinoa
  • 2 cups (or 1 can) black beans
  • 1 cup corn
  • 2 Roma tomatoes, chopped
  • green bell pepper, chopped,
  • 1/3 cup red chopped onion
  • 1/4 cup cilantro, chopped
  • 1/2 squeezed lime
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder

To make:

Prepare quinoa per instructions on package and allow to cool. Toss with black beans, corn and chopped vegetables and then stir in the lime juice, garlic powder, cumin and chili powder.  Presto!  Dunzo!
