Blueberry Banana Bread Bars…how is that for some alliteration?

 

Ok, so remember when I said I was going to stop baking so much in efforts to help with my fitness journey? I swear I am only baking when we have social gatherings and we just so happen to be having a lot lately so…

Anyway these are delicious. And they do have two types of fruit in them. So there. (So maybe I am a little defensive about my sweet addiction).

You’ll need:

  • 2 cups flour
  • 1 cup sugar
  • 1 stick butter, softened
  • 1 cup vanilla Greek yogurt
  • 1 tsp baking soda
  • dash of salt
  • 1 tsp vanilla
  • 2 eggs
  • 2 ripe bananas, mashed
  • 2¬†cups blueberries
  • sprinkle of¬†cinnamon

Cream together the butter and sugar then stir in Greek yogurt. Next, stir in the flour, baking soda, salt and vanilla. Once evenly combined, stir in the eggs and bananas. I suppose you can use a mixer, but I usually like to strong-arm the batter like an Amazon woman with a fork. Mixer or not, once you are satisfied with the consistency of the batter, pour into a greased 9×13 pan and bake at 350 for 40-45 minutes or until the center of the bars “spring” back when you poke it with your finger. Sprinkle with cinnamon.
