We had some spicy Italian sausage left over from my Creamy Italian Soup so I threw together some veggies, potatoes and the hot sausage for this awesome Spicy Sausage and Veggie Hash. It was an incredibly savory meal with over 6 varieties of vegetables, so that definitely made it healthy, right? We pan fried the leftovers the next day and served them with eggs for breakfast which was equally delicious! You know how I am a sucker for anything with eggs.
- splash of olive oil
- yellow onion, chopped
- 4 cloves of garlic, minced
- 2-3 spicy Italian sausage links thinly sliced
- 2 medium yellow potatoes, cubed in small squares
- approximately 10 brussel sprouts, halved
- red bell pepper, chopped
- green bell pepper, chopped
In a large pan, heat olive oil over medium heat and add onions, garlic, and sausage. Continue stirring until sausage is mostly cooked and then add potatoes and brussel sprouts. Continue to cook on medium heat and cover the pan for about 10-15 minutes, removing the lid every so often to stir. Once the potatoes are soft, add the bell peppers and a splash more of olive oil and cook for another 5 minutes without the lid. Serve with your favorite hot sauce or red pepper flakes for an extra kick!
And better yet, serve the leftovers with eggs the next day like we did! Yum!
