Spongy Pumpkin Bars

OK, so they aren’t the prettiest thing at the dessert bar. But I promise they have a flavorful personality.

 

I had some leftover pumpkin puree from making my Pumpkin Honey Steel-Cut Oats¬†earlier this week. As you might have noticed from my posts recently, I have been doing a semi-good job with not baking desserts in my efforts to simulate my fitness success…but having friends over is a good excuse to make an exception. So anyway, I baked these rather spongy and sweet pumpkin bars and they obviously had pumpkin in them so there was some minimal nutritional benefit.

You’ll need:

  • 2 cups flour
  • 1 1/4 cups sugar
  • 2/3 cup oil (vegetable oil, olive oil, coconut oil…up to you!)
  • 1 tsp baking soda
  • 1 egg
  • 1 cup pumpkin puree
  • 1 tsp cloves
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 1 cup chocolate chips

 

To make:

Grease a 9×13 baking dish and preheat the oven to 350. Combine ingredients in the order mentioned above (or in the order you choose because I really don’t think it matters). ¬†Stir until combined, the batter will be rather thick. Then spread the batter into the baking dish and bake for 25-30 minutes. Enjoy warm out of the pan, or put them in the freezer for a cool treat later!
