Kale and Cabbage Salad with Peanut Dressing

Kale and Cabbage Salad

We were still feeling full from all the great food we ate with family over Easter weekend so we were looking for a light dinner. I wanted to hit our systems hard with nutrition and found a great Kale Salad recipe that did just that. The original recipe is found here, but as you know I can’t stick to a recipe, here is what I did:

You’ll need:

For the Salad

  • 1 large bunch of kale, chopped into bite sized pieces
  • 1/4 red cabbage, sliced thinly into bite sized pieces
  • 1 bunch of green onions, chopped
  • 1 shredded carrot
  • 1 yellow bell pepper, chopped
  • 1/4 cup cilantro, chopped

For the Dressing

  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 TBS sesame see oil
  • 1 TBS sriracha sauce
  • 1 tsp ground ginger
  • 1/2 tsp garlic powder
  • 1/4 lime, squeezed
  • 1/2 TBS sugar


To Make:

Chop all of your salad ingredients as instructed (be sure everything is in bite sized pieces). Combine all the dressing ingredients into a jar and shake well until combined. If you prefer, you may put all dressing ingredients into a bowl and mix with an immersion blender. Toss the salad with the dressing: it might take you a couple of goes because the dressing is rather thick.
