I recently found a recipe for lemon tuna patties which looked yummy on Pinterest until I recalled an unfortunate situation where a certain husband accidentally bought a can of tuna in lemon flavored oil that had an uncanny similarity to the scent of Lemon Pine-Sol. We couldn’t eat tuna for years after that. So I threw out the recipe and decided to come up with my own creation and we were pleasantly surprised by these tuna burgers!
- 1 12 oz can of tuna (in water NOT oil, especially lemon oil)
- 1/2 cup of oatmeal
- 1/4 cup diced red onion
- 2 sprigs of green onion, thinly sliced
- 1 tsp garlic powder
- 1 tsp onion powder
- sprinkle of cumin
- 2 eggs
- olive oil
- English muffins (optional)
Drain the can of tuna and place tuna into a large bowl. Add oatmeal, onions and the spices. Scramble the eggs and add to the mixture. Using your hands, combine all the ingredients and then form into 4 patties.
In a pan, heat on high several tablespoons of olive oil and then add the patties. Cook uncovered for approximately 5 minutes, flip them and cook for 5 more minutes covered. Remove cover and cook for a few more minutes, until both sides appear crispy.
Serve on a toasted English muffin or alone with a side of Cheesy Pesto Bulgur.
