Mashed sweet potatoes


My husband isn’t a fan of sweet potatoes but even he had to admit this was a pretty good way to eat them. They are a much healthier alternative to the white potato and are full of vitamins like B6, D, and C!  I’ve also heard that the levels of vitamin C in sweet potatoes help promote the production of collagen which helps make your skin look younger! And if you need any more incentive to eat them, sweet potatoes are an excellent WW food!


To make mashed sweet potatoes, which we served with Black Bean Burgers  (how’s that for alliteration?), you’ll need:

  • 2 sweet potatoes, cubed (leave the skin on to maintain all the nutrients!)
  • 1 TBS butter
  • 1/4 cup chopped green onion
  • grated Parmesan cheese for topping


To make:

Boil the cubed sweet potatoes for approximately 20 minutes, until they become soft then drain the water. Add the butter and green onions and mash until they reach the texture you desire. Top with some grated Parmesan cheese and black pepper.
