I like to prep casserole dishes like this in the afternoon and then bake them when my husband gets home so we have time to do a work out together before dinner. Last night we did Fitness Blenders “Can You HITT Like a Girl 2″ workout (see link below) while the Broccoli and Brown Rice casserole baked in the oven. In 28 minutes, we got a great workout and dinner was done!
- 1 large head of broccoli, cut into small florets
- 2 cups of cooked rice
- 1 cup of ricotta cheese
- 1/2 cup of plain Greek yogurt
- 1 cup of shredded cheese (we used cheddar but I am sure any kind would be delicious)
- 1 egg
- Garlic powder and ground pepper for seasoning
Steam the broccoli florets. I do it the lazy way and put the broccoli in a bowl with about 1/2 cup of water and microwave for 3-4 minutes (until tender). Drain excess water.
Prepare rice as indicated on package.
In a separate bowl, combine the ricotta cheese, Greek yogurt, shredded cheese, egg and several sprinkles of the garlic powder and pepper. Stir until combined.
Combine this mixture with the steamed broccoli and cooked rice and pour into a casserole dish. Bake for 25-30 minutes at 350 degrees.
Top with Sriracha sauce for an extra kick!
