In efforts to kick the Oreo habit I picked up when I was pregnant, I’ve been making these awesome Blueberry Banana Smoothies (a recipe I got from my mother-in-law) for when I am craving something sweet. They are made with tofu for some extra protein power which also helps make it a thick, soft-serve-like texture! In addition to protein, the smoothie is packed with antioxidants thanks to the blueberries, and calcium thanks to the yogurt and the milk. This is a nutritional power-punch smoothie!
- 1 frozen banana, microwaved for 30 seconds in order to remove peel
- 1/2 cup of frozen blueberries
- 1 oz cube of firm tofu
- 1/2 cup milk
- 1/2 cup vanilla Greek yogurt
Slice the frozen banana into 1 inch chunks and put into a food processor or blender. Add blueberries, tofu, milk and Greek yogurt and blend until smooth. Add additional milk for a thinner texture.
Pour into a glass and enjoy!!!
