We’ve been having more Meatless Monday dinners and this Lentil Chili recipe is a great substitute for its meat-filled alternatives. When left to simmer, it becomes so savory you’ll forget that it is missing meat!
- Olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 16 oz bag of green lentils
- 12 oz can of diced tomatoes
- 32 oz of chicken or vegetable stock
- 2 TBS chili powder
- 1 TBS cumin.
- 1 jalapeno pepper
- Green onion and shredded cheddar cheese for topping
Heat a little olive oil in a pot and stir in diced onion and garlic. Once onion becomes translucent, add the broth, tomatoes and lentils. Stir in the chili powder and the cumin. Simmer on the stove for approximately an hour then add the diced jalapeno (for optimal spicy flavor!). Serve with chopped green onion and cheddar cheese!
