Cranberry Ginger Beer Bread

We had a bottleĀ of Leinenkugel Cranberry Ginger beer in our fridge leftover from when we had company well before Christmas. Since that style of beer isn’t my forte, I wanted to come up with a creative way to use it and to get it out of my fridge…and thus I created this recipe:

You’ll need:

  • 2 1/2 cups of flour
  • 1/2 cup of milled flax seed
  • 1/4 cup of sugar
  • 1 TBS of baking powder
  • 1 tsp of cinnamon
  • 1 bottle of Leinenkugel Cranberry Ginger Beer
  • 1/4 cup of melted butter
  • 1 cup of dried cranberries

 

To make:

Combine together dry ingredients and then slowly add the beer. Stir in cranberries. Pour batter into a greased bread pan and pour the melted butter on top. Bake at 350 degrees for 60 minutes.
