We get a Chinese food craving weekly and tend to cave-in to the awesome Chinese restaurant that is 2 blocks away from our house. Shoot. In efforts to fight off these cravings, I created this really yummy and savory stir fry with peanut sauce that is both healthier and cheaper than Chinese take-out food!
- Olive Oil
- 2 cloves of garlic, minced
- 1/2 yellow onion, diced
- 2 heads of broccoli, diced
- 3 stocks of celery, diced
- 1 bell pepper. diced
- 1/2 pound of beef, cubed
- 3/4 cups of peanut butter
- 6 TBS of soy sauce
- 1 package of rice noodles
- Garlic Powder
- Cilantro and shredded carrot (for topping)
In one pan, add a little olive oil, 1 TBS of soy sauce and one minced clove of garlic clove and saute for several minutes. Add the beef and continue to saute until beef is fully cooked. In a separate pan, add a little olive oil, 1 TBS of soy sauce, chopped onion and the remaining minced clove of garlic and saute until onion becomes translucent. Add the remainder of the vegetables and cook with the lid on for approximately 10 minutes, stirring often, until the vegetables become tender.
Prepare the rice noodles as indicated on the package.
To make the sauce, combine the peanut butter and 4 TBS of soy sauce and a sprinkle of garlic powder and stir until smooth.
Combine the beef cubes. rice noodles and vegetables in a pan over low heat and stir in the peanut butter sauce. Top with diced cilantro and some shredded carrot and enjoy your light “take-out” creation!
