We hosted a little Valentines Day party last week and I was craving a moist chocolate cake (pictured above). What the cake lacked in aesthetics and poor photography, it made up by being incredibly dense and moist! I happened to have a box of chocolate cake mix in the pantry but wanted to make something that had more of a homemade taste than what you’ll typically get from a store-bought mix.  Since mayo is the secret ingredient for any really yummy, moist cake I found it also works really well with boxed cake mix. Here is what else you’ll need:

  • 1 box of chocolate cake mix
  • 1 cup of HOT water
  • 1 cup of mayo
  • 3 eggs
  • Can of frosting

 

To Make:

Using a mixer, add hot water into the cake mix and then add the mayo and eggs.  I used two 9 inch round pans and baked the cakes for 30 minutes at 350 degrees. Allow to cool then coat with the frosting of your choice!
