I didn’t have time to run to the grocery store on Monday morning so we had to get creative for lunch. I had kale, eggs, hummus and cheese in the fridge and threw together these wraps which turned out to be pretty delicious.
- 4-5 stocks of kale (de-stocked, and chopped)
- A few tablespoons of chopped onion (if you have it)
- 4 scrambled eggs
- Hummus (as much as you desire)
- 1/2 cup shredded cheese
- 4 whole wheat tortillas
Adding a little butter to a pan, saute chopped kale and onion. Once the onion becomes translucent, add eggs and stir the contents of the pan until eggs appear fully cooked.
Spread hummus and sprinkle cheese on top of the tortillas. Add the kale/egg mix, wrap up and enjoy.
