This dish is a great way to eat a LOT of Brussel sprouts but also enjoy some savory sausage and pasta. This took me about 25 minutes to make and we loved it.
- Brussel Sprouts, quartered (I probably used about 40)
- 4 Sausages of your choice, thinly sliced (I used turkey sausage)
- Diced onion
- Minced garlic clove
- 4 oz light cream cheese
- 4 TBS pesto
- 1 box of Penne pasta
Rinse, quarter and toss Brussel sprouts in olive oil and bake for 20 minutes at 400 degrees. Dice onion and garlic and begin sauteing in pan with a little olive oil-add thinly sliced sausage.
Stir the pan until the sausage is fully cooked. Simultaneously boil water for pasta and cook the Penne. Allow cream cheese to come to room temperature and then mix in the pesto.
Combine roasted Brussel Sprouts, onion, garlic, sausage and the pesto-cream cheese in the pot with the Penne. Once evenly mixed, dish and enjoy!
Ok, so that last picture of the final product is not stellar-I had already started eating it when I remembered to take a picture…but it was really good, I promise!
