Low Carb Banana “Pancakes”

I ate these every morning for about a year and didn’t grow tired of them! They are a great low-carb option for an easy and filling breakfast each morning.

You’ll need:

  • Frozen Banana
  • 1 egg
  • 2 TBS Flax Seed
  • Just a little butter for greasing a pan
  • Peanut butter and honey (or whatever you like to put on top of pancakes)

 

How to:

Microwave your banana on high for 90 seconds to thaw it and make it mushy (I know, it sounds really gross).

Split the banana peel and squeeze (again, I know, “gross”), into a bowl. Add the egg and flax seed and stirĀ until the contents represent a “batter” consistency.

Smear a little butter onto your pan and pour the batter in. Cook on medium for approximately 3-4 minutes per side.

Top with your favorite pancake toppings, I prefer peanut butter and honey but I’ve also enjoyed them with blueberries and syrup!
