I ate these every morning for about a year and didn’t grow tired of them! They are a great low-carb option for an easy and filling breakfast each morning.
- Frozen Banana
- 1 egg
- 2 TBS Flax Seed
- Just a little butter for greasing a pan
- Peanut butter and honey (or whatever you like to put on top of pancakes)
Microwave your banana on high for 90 seconds to thaw it and make it mushy (I know, it sounds really gross).
Split the banana peel and squeeze (again, I know, “gross”), into a bowl. Add the egg and flax seed and stir until the contents represent a “batter” consistency.
Smear a little butter onto your pan and pour the batter in. Cook on medium for approximately 3-4 minutes per side.
Top with your favorite pancake toppings, I prefer peanut butter and honey but I’ve also enjoyed them with blueberries and syrup!
